Serena's Chicken Curry Casserole

Serena has made this for us after both our AZ babies were born. It's one of Ella's favorite dishes!


1 lb. boneless skinless chicken breast strips

oil

garlic powder

broccoli, frozen is fine

1 can  cream of chicken or cream of mushroom soup

1/3 cup mayonnaise

1 tablespoon lemon juice

2 teaspoons curry powder, (or more - to taste)

1/2 cup cheddar cheese, shredded


Dust chicken strips with garlic powder and sautee in oil just until the pink disappears. Cook broccoli till crisp-tender. Layer broccoli, then chicken in a casserole dish.


Mix together soup, mayo, lemon juice, and curry. Spread mixture on top. Finally, top with shredded cheese.


Bake at 350 for about 30 minutes, uncovered.
